Sending Baked Goods to Afghanistan?

My son is now serving in Afghanistan and I want to send him home baked goodies. I love to bake and he loves peanut butter cookies (some sites say they ship fine, some say they don’t). I want to hear from anyone who has shipped overseas to their loved ones, what kind of baked goods ship the best, and any other hints you might want to share.

I do know what is allowed to be shipped and what is not allowable, so I don’t need that information (thanks anyway). Just wanting to hear from experienced "shippers". Also, I have a food saver (the vacuum sealer for food) and was wondering if anyone used this for preserving cookies, muffins, etc. for shipping? If you have any tips on cheap packing filler (don’t want to use pop corn, they say it attracts bugs while in transit), it would be appreciated. Your help is truly appreciated.

Can I use a nitrogen wine preserver and a vacuum sealer to preserve food without refrigeration?

I love hiking and rock climbing, but I hate the ridiculous cost and pretty awful taste of MRE’s or store bought "camping foods," so I want to make some of my own. My idea is that I can cook my own meals at home, which I know won’t taste like crap, (and which I can supplement during cooking with nutrition products to increase the carb count and protein) and then use a vacuum sealer to preserve the food in packages, much the same way that MRE’s are packaged. My concern, however, is spoiling due to bacteria and whatnot after packaging.

After looking into food preservation techniques, I found that nitrogen or other gases can be used to replace the oxygen and therefore inhibit bacterial and fungal growth through hypoxia, which is pretty obvious for anyone who’s taken biology. I happen to have a wine preserver that uses little canisters of nitrogen gas to prevent wine from oxidizing after opening. It even has a convenient injector needle type thing. My question is, would it be possible to store food for a while at room temperature (and keep in mind I’m not asking for years of shelf life, just a few weeks or even a few months) by vacuuming out the air and then injecting and promptly sealing the nitrogen gas into these packages?

Sous Vide Chuck Roast (Louder Version)

Douglas Baldwin — author of “Sous Vide for the Home Cook” www.amazon.com and “A Practical Guide to Sous Vide Cooking” www.douglasbaldwin.com — demonstrates how he cooks beef chuck roast sous vide. First Douglas first vacuum seals a chuck roast with a clamp-style vacuum sealer. Then he cooks one in a SousVide Supreme at 160F and one in a PolyScience immersion circulator at 130F. After 24 hours the collagen has dissolved to gelatin in both roasts so they are very tender. Then he sears the medium-rare (130F) roast with a butane blowtorch and shreds the well-done roast for pulled beef.
